    How can you ever improve on cheesecake? Our friends at Zingerman’s Bakehouse, a beloved institution in Ann Arbor, Michigan, have found a way. Their special Rosh Hashanah cheesecake features swirls of vanilla tahini and chocolate fillings, plus chunks of sesame halvah. While not overly sweet, the cheesecake is rich and wonderfully indulgent. Our thanks to the folks at Zingerman’s for sharing the recipe with us.

    Ingredients

    • 256g brownies about 4 to 6 medium (2") brownies*
    • 2 tablespoons (28g) butter
    • 2 tablespoons (21g) chopped semisweet chocolate or chocolate chips
    • one 8-ounce package (227g) cream cheese room temperature
    • 1 cup (227g) farmer cheese*
    • 1 cup (198g) sugar
    • 1 tablespoon (8g) King Arthur Unbleached All-Purpose Flour
    • 2 large eggs
    • 2 large egg yolks
    • 2 tablespoons (28g) heavy cream
    • 1 tablespoon vanilla extract
    • 1 cup (256g) tahini
    • half an 8-ounce package (113g) cream cheese room temperature
    • 1/2 cup (113g) farmer cheese*
    • 1/2 cup (99g) sugar
    • 4 large egg yolks
    • 1/2 teaspoon vanilla extract
    • 6 tablespoons (85g) heavy cream
    • 1/2 cup (85g) chopped semisweet chocolate or chocolate chips
    • 1 cup (240g) vanilla halvah cut into 1/2" chunks
