    • 5 tablespoons extra virgin olive oil, divided
    • 3 garlic cloves, thinly sliced
    • 1 teaspoon dried crushed red pepper flakes (or less if you want less heat)
    • 1 lb (approx) of greens (I used half baby spinach and half kale, but you can also use broccoli rabe and/or mustard greens); remove thick stems from kale, and leave the baby spinach whole.
    • 1 cup of low-sodium vegetable broth (can use chicken stock)
    • 1 15-ounce can of cannellini beans (white kidney beans), rinsed and drained
    • Kosher salt and ground black pepper to taste
    • 1/4 cup shaved fresh parmesan cheese
    • OPTIONAL
    • Add to baguette slices (toasted or not) with some freshly shaved parmesan!
