    [Photograph: Yvonne Ruperti] These chocolate pancakes are great for breakfast or dessert. Notes: Make sure to use regular cocoa powder in this recipe, not Dutched. Do not overmix the batter. Avoid making it smooth. Maple syrup or raspberry preserves are good substitutes for the chocolate sauce.

    Ingredients

    • For the chocolate pancakes:
    • 1 1/3 cups all purpose flour
    • 1/3 cup plus 1 tablespoon cocoa powder
    • 6 tablespoons granulated sugar
    • 1 1/2 teaspoons baking powder
    • 3/4 teaspoon salt
    • 1/4 teaspoon baking soda
    • 2 large eggs
    • 3 tablespoons melted unsalted butter, plus extra for greasing pan and buttering pancakes
    • 3/4 cup whole milk
    • For the chocolate sauce
    • 1/2 cup whole milk
    • 5 ounces semi-sweet chocolate, finely chopped
    • 1 teaspoon pure vanilla extract
