    I love this stew recipe! It is so fresh, flavorful, and healthy!

    Ingredients

    • 1 tablespoon olive oil
    • 1 medium yellow onion, diced
    • 1 1/2 teaspoons dried oregano
    • 4 cloves garlic, minced
    • 4 cups low-sodium chicken broth
    • 1 1/2 pounds boneless, skinless, chicken breasts
    • 1 can (14-ounce) petite diced tomatoes
    • 3 cups chopped butternut squash (about 1 medium squash, peeled and seeded)
    • 2/3 cup uncooked quinoa
    • 3/4 teaspoon salt
    • 1/2 teaspoon pepper
    • 1 to 2 cups chopped fresh spinach
    • INSTANT POT INSTRUCTIONS:
    • Add all ingredients, except those needed for quinoa and cook for 15 minutes at high pressure. Meanwhile, cook quinoa on stove, so it can be added after instant pot has finished. Use Natural Pressure Release for 5 minutes, and then use a Quick Pressure Release.
